Met my mad friend Jaya in Bombay at the Sony office in 2002, because we were both hired for the ICC Champions Trophy happening in Sri Lanka, and we were very formal with one another for some reason that i cannot fathom, because in reality we are like pirates at sea. We again met in Sri lanka in the pool while swimming , and hung on the side like monkeys chattering away and then decided that we need to swim but would both not stop talking and we have talked ever since, we then did the Cricket World Cup in SA in 2003 and were constantly congratulating one another, because both of us had no real clue about the game , but we went for it like 2 lionesses after a kill, that's my green eyed friend Jaya , she is lovable, cries at plays , at movies , at cards and ya we take turns at being one another's mother , even though we both have wonderful mothers. She is mad , crazy and wonderful and sharp as a razor and the best producer/director/writer , i have ever worked with, she never minces her words and is such a wonderful ,caring, thoughtful ,loving friend,who thinks that she is a tough cookie, but is just a marshmallow .
She will stand by me even if I'm wrong, while flashing her green eyes at me, so my dear Ms. J , making what you love "Muffins" that are just like you soft and gooey and tempting ha ha
ha
White mountain , chocolate cupcakes
250 gms cooking chocolate
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter
1 1/4 cup sugar
2 large eggs
1tsp vanilla extract
1/2 cup sour cream
1/2 cup water
Melt the chocolate in a heat proof bowl or the top of a double boiler or baine-marie, after it is melted , set it aside.
Sift the flour,baking powder , baking soda and salt and keep aside.
In a large bowl, beat butter and sugar until smooth, add the melted chocolate and stir it really well.
Put 1 egg in at a time and blend it in.
Add the vanilla and furiously go at it.(miss my dad , he used to be the official cake beater, please come back soon ya)
Mix in the sour cream.
Now add just half the flour and water and blend it completely.
Mix the remaining flour and you are ready to bake.
This amount of batter makes cup cakes.Please use cake liner cups, i did not have brown ones so i did not, but the cake is soft and so maybe a little difficult to handle without them.
Pre -heat oven to 200 degrees, bring it down to 160 and bake the cupcakes for 20 minutes.
Take them out and leave them to cool.
This recipe recommends the use of an electric hand beater at all steps , but i have learnt from my Auntie Jeanette that cakes come out far fluffy and grainy ,if you just mix it with your hand, unless the quantity is very large.
Frosting
1 1/4 cup sugar
1/3 cup water
3 large egg whites
1/4 tsp cream of tartar
1 tsp vanilla extract
1/4tsp almond extract
Put sugar, water, egg whites and cream of tartar in a heat proof bowl or the top of a double boiler.
Now with an electric hand mixer on high speed, beat the mix till it is opaque, white and foamy.
Beat on high speed until the frosting forms soft peaks that stand straight up if you stop the beaters and lift them up, about 7 minutes.
Remove the container of frosting off the boiler, add the vanilla and almond extract and continue beating for another 2 to 3 minutes to further thicken it.
with a small spatula, spread about 1/2 cup of frosting over each muffin, making little swirls at the end.
Refrigerate and let it sit out for at least 20 minutes , before you serve them.
We'll Jaya and the kids are late, so i could not help but sink my teeth into this delectable, inviting , snowy , yummy muffin.....
