And so Akshay and Kichie celebrated their birthday together, i know them both now 8 years and they both still as nuts as the 1st day i met them , she is vegetarian and he loves meat, its like they are complete opposites but guess that's what makes them fit so we'll together...
And their wedding was the most fun ever...full of masti and madness...
i met them through their mum , the lovely Ritambhara who is also a tarot reader, and she is one of the nicest women i have known...since my life is full of lovely women, i would know...
don't want to go on a tangent about my girl-friends now , because can write volumes about them and their penchant for madness...
So back to Akshay and Karishma, i wish them both lotsa love and happiness , continue the fighting and the bullying and the loving...it is adorable....And Akshay you are just too sweet and wonderful....Kichie you too ha ha ha ...can see her fuming...she is like Zene actually...fully of tantrums and nautanki, but has a beautiful heart and will always be my little poo...
Was wondering what to make for them for their combined birthday party, when i hit upon this idea, Kichie loves my red velvet muffins , so i decided to make a whole lot of muffins , put them together like a cake and decorate it with a ying-yang , because that's what they are, completely different but fit very well together...
Ingredients
1 1/2 cups of sugar
1/2 cup butter, room temperature
2 eggs
2 1/3 cups cake flour
2 tbsp cocoa powder
1tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup buttermilk
1 1/2 tbsp red food colouring
1 tsp vanilla extract
1 tsp distilled white wine vinegar
Beat the butter and the sugar with an electric beater for 3 minutes..
Add the eggs 1 at a time, until each is fully incorporated into the mix...
In a large bowl sift all the dry ingredients together and in another all the wet ingredients...
Divide the dry ingredients into 4 parts and the wet into 3 ...
Add the dry ingredients to the sugar butter mix followed with the wet ....do this till all the wet and dry has been fully incorporated ...ending with the dry ingredients...
Scoop into cup cake papers , about 3/4 of the way full because they fluff up and bake at 170 degrees for 22 minutes or till a toothpick inserted into it comes out clean, leave it to cool on a wire rack...
Frosting
1/2 cup margarine
1/2 cup nutralite
8 ounce cream cheese
4 cups icing sugar
With an electric beater , cream the margarine and the butter , when its nice and fluffy add the cream cheese and sugar , it will all become a nice creamy mash , i was very happy tasting this mix all the time....that reminds me i have to start running...
Any way, i put all the cooled muffins together on a board and tied them up with a ribbon so that they stayed together in a circle, i then slathered the surface with the frosting and put it into the freezer, i then divided the frosting into pink and blue , put them into piping bags with a star nozzle, and piped the shape onto the prepared surface, so this really was a piece of cake and frankly , think this is very convenient because you don't have to cut slices or anything, just pull out a muffin and you are in the "eating business" ha ha ha
