And so last year , while I was studying at Tante Marie,
On one weekend I hooked off to Paris ...
Ha ha ha ...
Can't believe I actually did that, Paris for the weekend...
It's like what I used to see in movies or read in books ...

And I had decided that before I left Paris , I would go to Rose bakery and have a meal...
It's just the quaintest place to eat ...
All the food is prepared fresh everyday ...
The display of food is simple and the food is very wholesome and flavoursome ...

So on the 15th August, to celebrate Independence day ..
As the kids are home and I had finished their homework with them, and I kind of had the afternoon free..
I decided to once again make "pizzette" from the Rose bakery book..


So here goes

INGREDIENTS
500 gm flour
1 handful whole wheat flour
20 gm fresh yeast
1/2 tsp brown sugar
50 ml extra virgin oil,plus extra for greasing
2tsp salt...
1/2 cup semolina...

METHOD

Mix both the flours into a bowl..
Make a well in the center, crumble the yeast , add the sugar and 100 ml warm water...
Mix a little of the flour, into the yeast and water mix, and leave to rest
When the mixture bubbles, add the oil, salt and 200 ml warm water to the bowl..
Mix well and turn out on to a slightly floured surface..
Knead the dough for about 10 minutes..till smooth not sticky...add more flour if you need to..

Place in a well oiled bowl, cover with cling film and leave it to prove in a dry warm place...
It takes about an hour , and about a half more in our unpredictable weather..

When you are ready to start your pizza
Pre heat the oven to 200 degrees C..
Punch the dough down and divide into about 14 pieces..
Dust your work surface with semolina and flour and roll the pieces out into circles...
Make little circles with your hands or with a rolling pin....


This is really simple to make ...
And I let Zeke knead the dough ...
That he did with great aplomb...

  Then I raided my fridge for toppings...
The loot from my fridge...

Frankly I should have done this earlier ..
But anyway ...
My fridge is used to getting completed looted by me ...
It knows I'm a very impulsive and spontaneous ...
And so is always open hearted.... Ha ha ha

So I found corn, red and yellow peppers,cherry tomatoes, spinach,  broccoli, mozzarella fresh and the Amul variety, basil, baked garlic, mushrooms, chicken sausages and bacon...
And I was in the pizza business ...

I made a simple sauce with tomatoes, garlic , fresh basil, a little oregano and some white wine..
Then I sliced and sauteed the mushrooms in butter and  kept them aside..
I thinly sliced the peppers ...
And then took about half a kg onions and sauteed them with a handful of minced garlic and kept it aside..

I rolled out the pizzette into small circles..
Some were circles..
Some were squares ..
And some looked like Zeke's undies ....ha ha ha ..

Well I was just too happy making my pizzettes ...
And so smeared each one with some olive oil ...
Then sprinkled "Frankie masala" that I begged from the Frankie walla..
Well I don't know if people from out of Mumbai know what Frankie is..(tell you a bit later)
Them smeared a little tomato sauce, then all the other vegetables I had ...and on some put the fresh mozzarella and the others the Amul variety...


Think I got at least 28 little pizzettes...or more...
I had so many little baked happy cheesy ones...
Jumping out of my oven every 8 minutes ...

It was just too much fun...


And frankly there is nothing more satisfying than biting into a thin crusted, mozzarella dripping , bite of Italian goodness, made from scratch all by yourself ...
I was grinning like a  cat who licked the cream and still has ab muscles....ha ha ha ...

Deeeeeeeelicious is all I can say.....
If at that point to time ,a lovely tanned Italian , wanted to take me out dancing ...
I think I would say no...
OK wait let me think again...
Errrrr...................................... NO....
Ha ha ha


Made another batch of these "hotties" last night again for Ritambhara, Sambo, Akshay , Kichie( She is having a baby....Yeah), my kids and their friends...
It was mayhem in the kitchen , just like I love it to be...
With the aroma of freshly baked pizzettes and a swirl of wine doing a naughty dance...
And what a wonderful night it turned out to be, peppered with laughter , great conversation..
Baked chicken..
Lamb Shanks
Potato mash..
Chocolate muffins....

Me and my kitchen were very very happy....


So here's presenting , "Lil Mz Hot-stuff" ....

Just the right kind of hot, melting , irresistible, wanting smeared with ummmmmm yumminess...
Made and devoured with just my brand of passion...
